French bakery opens in Sebec Village
SEBEC — Galyna and Ambrose Lovely have opened Belle Boulangerie in quaint Sebec Village. Just before you reach the bridge crossing the Sebec River they are there serving up the best French breads and croissants outside of Paris.
Galyna is a Cordon Bleu-trained baker who is originally from Ukraine. Ambrose is from Aroostook County and was an international teacher who taught in schools all over the world. Galyna started selling her baked goods at the Bangor European Market and farmer’s markets in Howland, Stonington, Belfast, and Winter Harbor. Many days she would be sold out in half an hour.
Galyna said, “We had a fantastic customer base but it was difficult being an hour or 2 hours away and knowing my customers would not have the chance to eat their croissant hot and fresh out of the oven as it was meant to be enjoyed.”
When the opportunity arose to reopen a small restaurant in Sebec at 663 Sebec Village Road they jumped at it. Ambrose said, “The little restaurant was a favorite among locals but it had been closed for almost 20 years. With lots of elbow grease and new equipment we were able to open on June 29th.”
And they hit the ground running! The bakery consistently sells out of most items in less than an hour with people driving as far away as Augusta. “You can’t find this quality of ingredients and level of skill anywhere around here, stated one happy customer.
Galyna said,“The flour comes from Italy, our butter is made specifically for croissants and comes from New Zealand and our chocolate comes from France. We want to make the best baked goods with the finest ingredients.”
No shortcuts are taken here. There are no preservatives and all the croissants, Danish, and pastries are made fresh every morning by Galyna and Ambrose starting at 3 a.m. Hours are 9 a.m. to 12 p.m. on Thursdays and 8 a.m. until sold out on Saturdays and Sundays.
